Potato Ice-Cream
Guys… I would have never thought that it would work … But what a result!! π π π
Last week I bought two sweet potatoes and didn’t know what to do with them…
Plus, I had a craving for home-made ice cream, so I decided to experiment! π
Ingredients:
(serves 1)
1 large sweet potato
3 tablespoons of veghella
dark chocolate shavings for garnish
sugar (optional)
Method:
Boil the sweet potato, let it cool, mash it or pass it with the blender, along with veghella.
This is how it looks like, at room temperature, freshly made.
It’s already nice and thick and didn’t even need storing in the fridge! π
Now, let it cool in the freezer for half an hour and … Voila!! A super-healthy ice cream, that doesn’t need hours and hours of fridge and freezer! π π π π

O my, I have to try this! I used batatas for pies and marmalades , never thought about making and ice cream though
