Muesli Muffins
Really good! They were born as I needed to use a kind of muesli which I don’t really much like with milk… it came out as an excellent snack! 😀
Ingredients:
for the muffins
150 gr flour
80 gr muesli with fruit
250 ml soy milk
125 ml orange juice
60 gr unrefined sugar
3 tablespoons sunflower oil
1/2 teaspoon baking powder
for the topping
1 tablespoon flour
1/2 teaspoon cinnamon
50 gr muesli
45 gr unrefined sugar
1 tablespoon sunflower oil
Method:
Combine the dry ingredients in a bowl: flour, muesli, sugar and baking powder.
Place the liquids in another bowl: milk, juice and oil.
Combine liquid ingredients with the dry ones and mix quickly with a fork.
Fill the muffin cups up to 3/4 with the mixture.
Prepare the topping by mixing all ingredients, to get a creamy sauce (if you need more liquid, just add milk).
Sprinkle a little topping upon each muffin.
Bake in preheated oven at 200°C for 20-25 minutes.
Surely, what gives these muffins an edge over others is the coverage, which becomes a sort of crunchy glaze.
