Chocolate and Beetroot Cake
A fantastic cake, for this recipe I was inspired by that of a famous English cook, I changed something and the result is terrifically “sinful”!
Ingredients:
180 gr all purpose flour
240 gr sugar
75 gr cocoa powder
20 gr baking power
250 gr cooked and grated beetroot
220 ml corn oil
1 cup vegan milk
For the ganache:
250 ml vegan cream
250 gr dark chocolate, chopped
Method:
Pour the dry ingredients into a bowl (flour, cocoa, sugar, baking powder) and mix well; place the liquid ingredients and the grated beetroot in another bowl. Combine them all together and pour the mixture into a cake tin of 20-22 cm diam max; bake in preheated oven for 40-50 min. Do the toothpick test. Remove from the cake tin only once it’s well chilled, perfect for the day after. Garnish with the ganache, which is prepared by bringing the vegan cream to a boil and adding the chocolate off the heat. The texture is soft, excellent as a dessert, perhaps with a little vegan cream or ice cream or as a delicious and chocolaty breakfast!
I served it as you see, with a bit of ganache and graanulated sugar on the plate!

I’m just speechless! Must be soooooo good! And maybe if you reduce the quantity oy oil and increase that of beetoor, it comes ot good anyway and less fat, I wonder?
O MY GOD! I could die for this 🙂
I made Felicia’s brownies with beetroot (these: http://www.veganwiz.com/2010/09/09/beet-choc-brownies/), and I can confirm that beetroot goes wonderfully with chocolate!
