Choco Banana Bread
Honestly, this recipe is not mine, but belongs to someone, very good in the kitchen, whom I found on FB after a long time we haven’t been in touch. Browsing through her photos I fell in love with this Choco Banana Bread and I immediately wanted to know the recipe. Thanks to her I also started feeling like preparing cakes, as I’ve always been a real disaster… Thanks Stefania 🙂
Ingredients:
100 gr walnuts
230 gr wholewheat flour
150 gr cane sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
18 gr baking powder
3 teaspoons ground cinnamon
130 gr soy butter or margarine
3 large ripe bananas (450 g), well mashed
40 gr vanilla powder
100 gr dark chocolate
Method:
Grease a plum cake mould with a knob of soy butter or margarine.
Place the walnuts on a sheet of baking paper and bake them for 8/10 minutes, until lightly toasted. Let them cool and chop coarsely.
Coarsely chop the dark chocolate as well.
Mix flour, sugar, baking powder, baking soda, salt, cinnamon, chocolate and walnuts in a large bowl.
In a medium bowl, mix mashed bananas, soy butter or margarine and vanilla.
Pour the wet ingredients into the dry with a wooden spoon and mix until the mixture gets thick (don’t mix it too much!). Pour it in the mould.
Bake in non fan oven at 180°C for 45 minutes, or better until gets golden and has passed the toothpick test!
