Filled Sweet Flans

I have disappeared for a while … it’s not a great moment… this spring hasn’t begun at its best. To celebrate the arrival of spring, my favorite, and of these sunny and warm days, I decided to make a cuddly sweet treat!
Ingredients:
(makes 5)
150 gr brown sugar
1 cup soy milk
1 pinch of salt
3 tablespoons oil
3 tablespoons all purpose flour
2 teaspoons baking powder
200 gr desiccated coconut flakes
chocolate drops or chopped chocolate
Method:
In a bowl combine milk, salt, oil and sugar, and mix well.
Add coconut, flour, baking powder.
It’s a mixture of a medium consistency… not too liquid but soft!
Grease the moulds with margarine, oil or baking paper, and fill them up to the half with the mixture.
Now, place a few drops of dark chocolate or chocolate chips in the inside, and cover with more mixture .
Bake in a hot oven at 180°C for about 20-30 minutes.
Remove from the oven and let them cool. I grated a piece of chocolate over them, to decorate.
They are really good, is the second time I make them! I like them .. a must for those who love coconut .. and then, what’s better than coconut & chocolate? 😛
The filling:
I had also made them cookie-version, with a few drops of chocolate, adding nearly twice the dose of coconut .. excellent!
