Choco Banana Brownies

I have been wanting to make brownies for a while. Traditionally, they call for a lot of chocolate and eggs and not much flour. No problem for the flour … and certainly not for the chocolate, the problem are the eggs. In this case I replaced them with bananas. In terms of consistency, it’s excellent. But what if you don’t want to prepare a cake which tastes of banana?! Easy: just replace the weight of banana with the same amount of boiled chestnuts, or even better, with well-cooked and puréed azuki beans. Terrific! Just keep an eye on the calories … it’s so chocolaty!

(makes 6 slices)
100 gr dark chocolate
55 gr cake flour
50 gr cane sugar, or better, malt
1 tablespoon wheat starch
1 teaspoon cream of tartar
100 gr banana
1 tablespoon corn oil
1 tablespoon soy cream (or yogurt)
cocoa for dusting
1 pinch of salt

Melt the chocolate with a tablespoon of oil. In a bowl, mash the banana very well and mix it with sugar and soy cream (or yogurt).
Combine flour, cream of tartar, starch and salt. Add this flour mix to the mashed banana and mix well. As a final step, add the melted chocolate, blend everything and bake at 180°C for 20 minutes.
The cake will rise a little bit, but then, once removed from the oven, it’ll get lower. It’s normal! You should obtain some flat squares which then will be then dusted with cocoa powder.
