Vegan Yakisoba
It’s a typical Japanese dish, very healthy and complete, which I “veganized”.
Ingredients:
1 red pepper, green or yellow (as you prefer it)
1 onion
250 gr soya steaks, soaked overnight
1 medium cauliflower
150 gr noodles
2 carrots
1 tablespoon olive oil
2 tablespoons shoyo
1 tablespoon cornstarch (cornflour)
Method:
Blunt and scrape the carrots, wash and cut them into small pieces, as well as the pepper. Cut out the florets of broccoli.
In a steamer, steam cook broccoli, carrots and pepper.
Cut the soy steaks into small pieces and steam cook them, but not together woth the vegetables. Cook the noodles leaving them “al dente”.
In a wok (or in a normal pot if you don’t have it) fry the the onion in a bit of oil; sauté the vegetables first, then the soy steaks and finally the noodles. Dissolve starch and shoyo in 60ml of water. Add them in the wok where the vegetables are and leave them a few minutes, until it becomes creamy. Turn the heat off and eat.
