Cool Zucchini Soup
raw, with mint.
I heard of it in a new organic bar and I intended to do it.
I do not know whether the one I had, except for being served cold, was made of cooked zucchini, but I used them completely raw . Now that it’s spring, raw food is welcome…
Ingredients:
fresh zucchini
mint in abundance
salt
lemon zest
Method:
Beat in the zucchini in a blender for a while. Not having it, I first grated them and then pureed with a hand blender.
However, it should become a cream, I mean, without visible or identifiable pieces of zucchini in your mouth. That’s why the hand blender is perfect.
Add the rind of half a lemon, previously grated, and mint, according to your taste (I put, I’d say,5 or 6 leaves); anyway, you should taste the fresh flavour. Dilute with a little water or soy milk just in case.
Salt a bit, to taste.
Serve completely cold with a mint leaf and some “memories” of lemon zest.

You should also try cutting raw zucchini in very thin slices and adding natural white yogurt and some fresh dill to your recipe, according to your taste…
