Amaranth flans
with walnuts and raisins. While cooking amaranth I found that its smell reminded me of walnuts, that’s why I thought about adding them to the recipe, and as for raisins, I think they balance its flavour, which may seem just a little bit bitter.
Ingredients:
1 cup amaranth
2 cups water
1 tsp veg broth powder
2 tbsp extra virgin olive oil
1 mashed garlic clove
½ cup coarsely grinded walnuts
½ cup minced turnip greens
½ cup raisins
salt to taste
sprouts for garnishing (any kind)
Method:
Cook the amaranth with water and broth powder in a covered saucepan until the water is absorbed (about 10-15 minutes), then turn the fire off and let it rest. In the meantime heat the oil in a frying pan, add garlic and walnuts. After a few minutes, when walnuts start to change in colour, add turnip greens, raisins, ½ cup of water and salt. After 3-5 minutes transfer this mixture in the saucepan containing amaranth and let it cook stirring well until the water is completely absorbed. Oil 2-3 moulds with olive oil and press the amaranth inside, then turn them out on a plate. Garnish with sprouts of your choice (I used linseed sprouts).
This is great! I never use amaranth, basically because I forget of his existence… but these flans as so yummy! I also like the choice of the filling, turnip and raisins must be surprising 🙂
