Spelt with Artichokes and Savoy

Oh well …. not exactly a spring dish, but since the artichokes won’t be here for too long, I took the opportunity to share with you this tasty recipe.

Ingredients:
200 gr of spelt
2 onions
2 artichokes
1/2 Savo cabbage
1 teaspoon of fennel seeds
salt
extra virgin olive oil

Method:
Wash and drain the spelt, put it in a pan with water about twice its volume, bring to a boil, add salt and cover. Cook over a medium heat for about 30 minutes. Then drain and put it in a bowl. Cook the vegetables: in a saucepan, put the chopped onions, cabbage and artichokes, cut into small pieces, after washing them, and pour a little extra virgin olive oil.
Cook making them stew over a low heat, cover and add salt. Continue cooking for about half an hour, shaking the pan closed with the lid.
The vegetables should become as shown.
After that, combine spelt with the stewed vegetable, add the fennel seeds and keep it on the heat for a few minutes more, stirring carefully. Before serving, add salt and oil, and it is ready to be scoffed. Enjoy your meal!

    I do love artichokes a lot! This is very interesting – I never prepare spelt, as I’ve always thought that it takes too long. Would be a good idea in these cases to have a pressure cooker I suppose
