Saffron Cookies

200 gr of flour
150 gr of margarine
120 gr of blanched almonds
100 gr of sugar
a dash of rice milk

In food processor, chop almonds with sugar. Melt the saffron in a little milk. Mix the margarine (room temperature) with flour, then add ground almonds and sugar, plus the saffron flavoured milk.
Knead until you get smooth dough, shape it into a ball, which you’ll wrap with a sheet of cling film, and let it rest in the fridge at least half an hour.
Roll the dough out and shape cookies with cookie molds, put them in the oven at 180┬░C for about 20 minutes (I always prefer to do the toothpick test).

    I very much like saffron, it gives a distinctive flavour to every dish, I want to try these cookies
