Chestnut Muffins

Last morning I had a bit of time before going to the office, so I decided to make these muffins. Certainly it’s not season for chestnuts, but I had to use some leftover marron glaces 🙂 Besides, in Milan today is autumn …

These muffins have a basic preparation, that can be adapted to many different tastes, but in this case I also slightly modified the base, using chestnut flour instead of white flour.

130 gr of chestnut flour
50 gr of sugar
20 gr of sunflower oil
100 gr of water
3 large marron glaces
1 tablespoon of baking soda

After weighing all the ingredients, turn the oven on to 170°C, so that it’ll be hot at the time to bake. Coarsely chop the marron glaces and pour all ingredients in a bowl, leaving the baking soda as last. Mix well the mixture making sure that the flour doesn’t create lumps. At this point it’s done, the preparation is really fast! Then fill 6 muffin molds (I used the silicone ones, that I find really useful) and bake in preheated oven for 15-20 minutes.
