Pea Tortilla
The Bimby has arrived and this is the first preparation!
Ingredients:
100 gr of dried peas
water as needed
salt and pepper
red or white onions
oil
parsley
Method:
I put the peas in the jug of the Bimby, 1 min, speed 10 (you can get a decent pea flour also with a hand blender).
I added salt, pepper and water very slowly, 2 min, “spoon” speed (or you can add water in the jug and stir it with a whisk). I poured the mixture into a bowl, added chopped parsley and let it stand in the fridge overnight.
In the first half an hour you should add a little water, as the flour so obtained is very rustic and drinks a lot.
For cooking, I got a non-stick pan, I poured a bit of oil and sliced onions, fried for a few minutes, then poured very slowly the pea flour and cooked in preheated oven at 200°C for 10 min. Once done, turn it upside down in a plate and enjoy. Amazing, the quintessence of peas!

This is the kind of things I love! I bought something similar to Bimby last year, and I’m really having fun making all sorts of flours… lentils, millet, quinoa, buckewheat, just by myself and “freshly milled”. But I’ve never thought of dried peas… I must give it a try!
