Cabbage Burgers
Or burgers of recycling: cabages and vegan ricotta cheese!
Ingredients:
(makes 8 burgers)
a plate of leftover boiled cabbage
3 tablespoons of leftover Concita’s ricotta cheese
6 tablespoons of breadcrumbs
1 slice of bread
black pepper
curry
extra virgin olive oil
Method:
I had some ricotta in the fridge from the last days and some cabbage, leftover from lunch and I thought I’d make some burgers; but, as you’ll see from the photos, you can also make patties.
Just mash the cooked cabbage with a fork and then add, always mashing well, a slice of bread, soaked in the cooking water of cabbage (I had kept it to cook pasta), vegan ricotta, breadcrumbs, pepper and curry.
Form burgers or patties and roll them in breadcrumbs. Let the mixture rest for a few minutes before the working it, anyway should be soft.
I placed them in a baking pan lined with baking paper, left them in the fridge (the more hours they rest, the better they will come out). Then, I sprinkled them with a little oil and cooked in hot oven for half an hour, ending the cooking with a bit of grilling.
They came out soft inside and crispy outside, really good. Just try them if you like cabbage, you will not regret it! And then, you can also prepare them a day in advance and cook the last minute: handy, isn’t it?

That’s nice and interesting! Never thought of making patties of cabbage. And also, never done ricotta cheese so far, to be honest 🙂
seem great. the only thing is that every time I try to do patties or burgers they just fall apart… maybe because I don’t allow for them to rest in the fridge. I thinks that’s because there are no eggs (pretty sure) but I’ll follow your method and leave them in the fridge for a while
