Spelt Cookies with Orange
By combining more recipes I made these cookies! I liked them a lot, also because I love spelt and wholegrain spelt flour… 🙂
Ingredients:
250 gr of wholegrain spelt flour
100 gr of chickpea flour
juice of 2 oranges
zest of 1/2 orange
100 gr of brown sugar
50 gr of seed oil
18 gr of baking powder
1/2 teaspoon ground cinnamon
to garnish: almonds, chocolate chips, pine nuts …
Method:
Grate the zest of 1/2 orange and then squeeze the juice of two oranges. In a bowl, mix the juice, oil, sugar, orange peel, cinnamon and baking powder with a whisk. Gradually add the spelt and the chickpea flour, form a ball (should have the consistency of pastry) and store it in the fridge for about 30 minutes.
Roll the dough out and cut out the cookies, I just made some pellets. Then, decorate as desired. Bake for 15 minutes at 180°C.

I like the idea of using chickpea flour in cookies… a bit of proteins, I mean, which isn’t bad at all 🙂
