Spinach Soup
Ingredients:
(makes 6 cups)
400 gr of spinach
50 gr of flaked cereals (rice, oats or other)
1/2 onion
2 cloves of garlic
5 tablespoons of extra virgin olive oil
1 tablespoon of quinoa flour (or rice flour or corn starch)
1 tablespoon of dark miso
pepper
1 liter of vegetable broth
Method:
Wash spinach.
Sauté onion and garlic, finely chopped, in a bit of oil.
Add spinach, coarsely chopped, vegetable broth and cereal flakes. Let it simmer about twenty minutes over a low heat.
Liquidize half the soup with a hand blender, and then pour it back into the pot; add the miso, let it dissolve well, add the flour and let it dissolve very well, without lumps. Let it simmer a quarter of hour.
Pour it into the soup plates and sprinkle with a little pepper.
