Raw Orange Balls
With the leftover of some centrifuged carrot and pumpkin, I made these pellets. What a surprise! They are excellent 🙂
Ingredients:
1,5 cups of centrifuged carrot and pumpkin (I think you can use just carrot)
1/4 cup of soaked dates
1/4 cup of walnuts
1 teaspoon of cinnamon
zest of 1 orange
2 tablespoons of agave juice
2 tablespoons of flaked coconut + some more coconut to decorate
a pinch of salt
Method:
Place all the ingredients in a food mixer and process until you get a homogenous mixture, add a bit of water if needed. Once you’ve got the mixture, shape it into pellets with a teaspoon and roll them in flaked coconut. Place them in the fridge for a few hours 🙂

These are interesting, you know. I wonder somehow how to use the leftover from the centrifuged stuff, generally I use them in cake and muffins but this is a good idea. Thanks!

I am just wondering how to replace walnuts. Indeed I am the mother of a little boy that is supposed to wait 2 month to eat nuts because of the risk of allergy…

I replaced the walnuts with hemp seeds! I made the proportions roughly. It might have been too soft but I loved it. Unfortunately I don’t think my husband liked it much. My 3 year old daughter helped me to do them but did not want to try 🙁 But the best news is that my 12 month old son loved them!!! He gets excited when he sees them and it is great to know he is eating healthy food! Thank you so much for this recipe. It is a good usage of my carrot pulp.
