Happy Veg Burger
Ingredients:
for the burger:
1 soft homemade bun (with a lot of crumb!)
1 aubergine
1 carrot
2 potatoes
1 clove garlic
chick pea flour / bread crumbs to bind it all
salt
pepper
cumin
tomato slices
1 lettuce leaf
for the guacamole:
1 ripe avocado
the juice of one lemon
1 small shallot
1 tomato
salt
oil
Method:
Prepare the burger by boiling all the vegetables. While draining them, press the aubergine well to remove the excess of water. Process the vegetables in the mixer with all the other ingredients; if the mixture is too soft, add chickpea flour or bread crumbs.
Heat a little oil in a frying pan and form the classic “patty” shape; cook on both sides. If you want, you can roll the burgers in corn flour and bake them.
Put your HappyVeg Burgers together and scoff them … if you can … mine was as big as a flying saucer. Very hard to bite all together … to let you understand the proportions, the plate in the photo was for pizzas! :-O
