Melococonut Muffins
Or with melon and coconut flour 🙂
Well, June is (finally) on its way, and with it (not really “finally”), also the summer session of exams … So, as the stress begins, I decided to cuddle myself a bit with some muffins with coconut and the first melon of the season 🙂
I liked the result… The only thing is that next time I’ll put a little less sugar and more coconut …
Ingredients:
(makes 12)
200 gr of flour (this time I used wholegrain kamut)
150 gr of brown sugar (or other sweetener… I put a little sugar and a little agave syrup)
1 tablespoon of cornstarch
30 gr of coconut flour
approx 200 gr of melon, cut into small pieces
4 gr of cream of tartar
1/2 teaspoon of baking soda
water or vegetable milk to taste
Method:
Get your melon and cut it in halves, then remove the seeds and cut it into small pieces.
Turn the oven on to 180°C. In a bowl, combine first all the dry ingredients (flour, sugar, cornstarch, cream of tartar, baking soda and coconut flour) and mix. Now, add the water or milk and stir the mixture until you get the right consistency. Combine the melon and mix well again.
Finally, fill the muffin cups with the mixture and bake for 25 minutes. Remove from oven and garnish as desired :-).
