Mushrooms with Nettle

Special mushrooms…

Found on the Internet as I a desperately needed a decent recipe to use the nettle that I finally found my fields!

4 mushrooms
2 potatoes
soy milk
100-150 grams of nettle (the original recipe calls for powdered nettle)
nutritional yeast flakes
extra virgin olive oil as needed

First, boil the potatoes. Meanwhile, boil water, wash the nettle and cook it for 2-3 minutes, drain and once cool chop it finely and set aside. Prepare the potato mash: mash the potatoes very well, heat some oil in a pan, add enough soy milk to get a sort of cream and cook for 5 minutes, add the nettle and stir, switch the heat off and add the nutritional yeast flakes, 1 or 2 tablespoons. Now prepare the mushrooms, clean them by removing stems and skins: be very careful, they should be very hollow, don’t remove the sides as they must contain the mash. Now, transfer the mash into a pastry bag and place the mixture on the mushrooms in a decorative way; sprinkle with nutritional yeast, place the mushrooms into a baking sheet and bake at 190°C  for 15-20 minutes. Nutritional note:
Nettle is higlhy beneficial, especially known for the presence of iron, but also other minerals, and is not only an anti-anaemic food; for its high content in chlorophyll (as all plants with a deep green colour, as the chlorophyll becomes hemoglobin in our blood) is detoxifying and contains antioxidant vitamins, such as vitamins A and C. It can also be served simply boiled and dressed with oil and salt, very good!

    there’s plenty of nettle in the park near to my flat… i can try them! I’m seing a lot of recipes with nettle, so inviting!
