Chickpea and Cannellini Burgers

These burgers came out too good… crispy outside and soft inside, and my kids liked them a lot. My oldest son… I do not know how many of them he had!

I cooked them in the oven, to make them lighter, but you can also fry them with a little oil.

1 can of organic chickpeas, already boiled
1 can of organic beans, already boiled
fresh parsley, finely chopped
sea ​​salt
spelt bread crumbs
pilaf rice

The most boring job was yo pureé chickpeas and cannellini with the moulinette, in order to remove skins. Once done this, I mixed pulses, parsley, a little salt and two tablespoons of breadcrumbs in a bowl. I shaped ​​the burgers, rolled them in bread crumbs and cooked in the oven at 180°C, until golden brown, turning them once. They should be served piping hot !!!!!
I accompanied them with white pilaf rice. To make it, I cooked a cup and a half of rice in two cups of boiling veg broth, already salted, and a little oil, covered with a lid for about 18 minutes.
