Verrine with Red Fruits
Red fruits are one of my great loves … eaten plain or this way, which I’ve always liked. It’s a very easy recipe, colourful and refreshing, but especially useful in fighting free radicals!! 🙂 🙂 good as breakfast, as s satisfying snack and why not, as a dessert.
Ingredients:
(makes 1)
1 handful of blackberries
1 handful of raspberries
a handful of redcurrants
2 tablespoons of unsweetened corn flakes
3/4 tablespoons of soy yogurt
pistachios
a few drops of balsamic vinegar to decorate
Method:
Mash the fruit separately with a fork, to make them creamy. In another bowl, grind the corn flakes, just by crushing them very well with your hands, to get some crumbs. Place a bit of cornflakes and yogurt on the bottom of a glass and add little sugar if you wish (I haven’t). Place a layer of blackberries and repeat layering with crumbled flakes and yogurt. Place the raspberries and another layer of flakes and yogurt. Close with blueberries, corn flakes and yogurt. On top, add pistachios.
Just give free rein to your fantasy… adding nuts, seeds or whatever you like! 🙂 🙂
