Tzatziki My Way
During the hot weather, turning on the oven or the stove is quite a burden for me, I prefer to have something cold… and raw 😉 Then, I go for salads and similar things!
Maybe it’s too much to call it a recipe, it’s so easy and quick. Traditionally. tzatziki is a sauce, and cucumber is chopped, but I prefer to dice it, so I can feel its crunchiness.
(I also take the opportunity to introduce my homemade cucumber!)
Ingredients:
1 cucumber
1 pot of unflavoured soy yoghurt
½ clove of garlic
juice of ½ lemon
1 teaspoon of vinegar
paprika
chive
black olives
oil
salt
Method:
Clean and cut the cucumber into thin slices. Sprinkle a pinch of salt and let it drain for 20 minutes.
Meanwhile, combine soy yogurt to the minced garlic and add spices, vinegar, lemon and olive oil. Mix with a fork until the mixture is creamy.
Season the cucumber with the sauce and add some black olives.
