Sweet Pastry
Have you got unexpected guests? Do you need to make a cake quickly, without spending hours on it? Would you like serve a different dessert, but easy to prepare? (now I feel like a tele-seller… ha ha).
Here’s the solution:
Ingredients:
(makes 4)
vegan puff pastry
2 apples
1/2 abundant glass of sugar cane
same amount (but also a bit less) of margarine (I used Provamel)
1 can of whipping soy cream (Soyatoo)
grated zest of half an organic lemon
Method:
Turn the oven on to 180°/200°C. Peel apples and cut them into thin slices.
Meanwhile, put sugar and margarine on the stove and heat until it thickens a little, stirring constantly to avoid lumps of sugar.
Get the molds (mine are 12cm diam), line them with apple slices; pour the “caramel” over with lemon zest and cover with pastry, previously cut the same size of the mold.
Bake until the pastry gets nice and golden (15 minutes).
Let them cool, remove from the molds and turn the tarts upside down; serve with whipped cream.

It ‘s a really simple recipe but believe me, the result will amaze you!
The original recipe calls for pineapple instead of apple, but I preferred the latter… I think it would come out very good also with banana or pear … certainly to be tried in all versions! 😉
