Orecchiette with Chickpeas and Leeks

A dish with a high protein content, nutritious, quick and good!

Ingredients:
(serves 2):
140 gr of spelt orecchiette pasta
80 gr of dried chickpeas, already boiled
1 leek
1 tablespoon soy milk
extra virgin olive oil to taste

Method:
Cut the leek into thin strips and pan fry it in a little oil, already hot for 3 minutes, then add half a glass of water and cover with a lid. It’ll take about 5 minutes to get the leeks cooked and softened. Then, in the meantime, boil the orecchiette pasta in salted water: being pretty fast, they’ll need 6 minutes to be done.
Once the leek has softened, add the chickpeas with 2 tablespoons of their liquid, then drain the pasta and add them in the pan, stirring with a spoon of soy milk to add creaminess.
The dish would be done; but, if you’ve got some leftover chickpeas, as I’ve got, you can pur√©e them with a few drops of lemon juice and pepper, and then decorate the plate.

The combination of orecchiette pasta and this sort of hummus is just ecstatic!

The only thing I’d point out is the way I cooked chickpeas: I soaked and cooked them without salt (because it slows down and inhibits the cooking), and flavourings (because legumes usually neutralize the flavours while cooking), but I added a piece of kombu seaweed, which I used in other recipes after cooking. Eventually, I let the chickpeas cool in their broth and I didn’t drain them, but kept them in a container only adding rosemary, sage and bay leaves at that moment. The liquid in which I kept them was therefore not salty, but tasty and flavoured. As for canned chickpeas it’s a different matter, and not recommend to use the liquid, you’re likely to use a very salty broth, full of preservatives, unless it’s organic!
