Rocket Pesto Mix


I found a nice box of rocket and I tried this pesto… a bit fanciful 😀

150 gr of rocket
pine nuts
dried tomatoes
1 clove of garlic
soy cream
soy milk
extra virgin olive oil

Place the rocket, washed, in a bowl with a bit of oil, and begin chopping it with the hand blender. Gradually add the other ingredients. I actually went on without measuring anything at all… indeed, to taste. The ingredients that I had originally planned to use were only rocket, sun dried tomatoes and pistachios. Then, however, it was a little too bitter and salty, so I added some almonds, pine nuts, a drizzle of soy milk and a little cream to sweeten it. Finally, I also added a minced clove of garlic, and enough oil to reach the right consistency of pesto, adding a bit of salt and pepper to taste (a pinch of salt, or better no salt at all I’d say… basic ingredients are already pretty salty!). I got a lot of it, I put a jar in the freezer and I used the other for a tasty lasagna that I will show you later on 😉 !

    I’d dive into it!! Must have such a delicious flavour and taste! I’d have it all spoonful after spoonful… 😛
