Rice + Beans Marriage

I premise that I prepared this recipe last night , for my husband, who asked me for more proteins for his muscles (ah ah ah) thinking that I wouldn’t like it particularly, and instead I found it an amazing dish … let’s say that yesterday, at the end, I had dinner twice! 😉

But let’s cut the cackle… let’s start with the recipe:

Ingredients:
3 handfuls of rice
same amount of beans (fresh if in season, or frozen or dried)
10 or more plum tomatoes, halved
1 large clove of garlic, halved
sage, rosemary, chives and bay
1 glass of red wine
extra virgin olive oil
1/2 vegan stock cube (if you need, you can add salt at the end)
black pepper

Method:
After cooking the beans with a piece of kombu seaweed (don’t cook them too much though, must remain nice and firm), put oil and garlic in a saucepan. Add tomatoes, sage and rosemary, and let them cook a couple of minutes.
Add the rice as well and toast it for a minute; then add beans and bay, and gradually add the vegetable broth (water and stock cube). When almost done, add pepper, chives and sprinkle with red wine. Keep cooking a few minutes more and … the rice’s done!

    oh oh… must be delicious! I read somewhere that legumes + rice it’s the best thing you can have to allow your body to absorb all the proteins as best as it can
