Seitan in Pink Sauce
And here it is a main course from a pink menu, an unusual dish that boldly combines mushrooms with radishes, but don’t be scared … it’s delicious!
Ingredients:
seitan, nice and firm
radishes
soy cream (not sweetened)
dried porcini mushrooms (or fresh mushrooms)
garlic
parsley
extra virgin olive oil
white wine
salt and pepper as needed
Method:
Pan fry garlic and parsley; add the dried mushrooms, previously soaked in warm water; then add the seitan, cut into chunks. Sprinkle with white wine, season with salt and pepper and cook over a low heat.
In the meantime, prepare the sauce: blend the soy cream with radishes (to get a nice colour, I put more skins than flesh …) and salt. Serve the fragrant seitan with the pink sauce and enjoy 🙂
