Seitan with Vegetables

in a mint and yogurt sauce.

I wanted to prepare a new dish with my homemade seitan; thinking and thinking again… here it is a fresh dish, summery and tasty.

(serves 1)
a slice of seitan
4 small cauliflower florets
4 small broccoli florets
1 small potato
3 tablespoons of unflavoured soy yogurt
coriander powder
1 teaspoon of tamari
for the mint sauce:
1 handful of fresh mint leaves
2 teaspoons of sugar
1 pinch of salt
1 pinch pepper
2 tablespoons of cider vinegar
little water

Prepare the mint sauce: wash the mint leaves, process them in a blender with sugar, salt, pepper, vinegar; add a little water at a time while blending, until you get smooth texture, similar to that of pesto. Set aside to rest.
Peel the potato and cut it into slices, about 1 cm thick; wash the other vegetables (I used frozen ones) and place them on basket for steam cooking, after sprinkling them with a little salt, pepper and coriander powder.
Meanwhile, brush the seitan slice with a little oil on both sides, and cook it in a frying pan, a few minutes each side. Once done, pour in the tamari sauce diluted with a teaspoon of water, and let it flavour on both sides. As soon as all the cooking liquid evaporates, turn the heat off and set the seitan aside.
Get the yogurt and mix it with 3 teaspoons of mint sauce.
Place this mixture on the plate, lay the steamed vegetables and seitan on the yogurt and sprinkle again with a few teaspoons  of mint sauce.

    wow!! I love seitan and this seems a perfect way to “celebrate” it!! Yours is perfect, was it homemade?
