Tofu Punjabi


Today I tried this Indian recipe and I must say the result was excellent. It’s a healthy and tasty recipe, and contains many spices I love ;-). Seems complicated as it has many ingredients, but it’s really easy to make.

(serves 2)
150 gr of basmati rice
1/2 – 1 block of tofu
2 tbsp of olive oil
2 bay leaves
1/2 stick of cinnamon
2 green cardamom pods
3 cloves
1 + 1/2 tbsp of cumin seeds
3 cloves of garlic
1 inch of ginger
2 green chillies
2 large onions
3-4 tomatoes
1 tsp of chili powder
2 tsp of coriander powder
1 cup of water
1 tbsp of Garam masala
1 handful of fresh coriander or basil
salt, to taste

Chop ginger, garlic and green pepper and put them in a bowl.
Chop the onions with a dash of water to obtain a cream, and add a bit of salt.
In a saucepan, on a medium heat, add 2 tablespoons of olive oil;  when hot, add cinnamon, cloves, bay leaves and cardamom.
When they sizzle, add cumin seeds and fry them for a few seconds, until you can smell their aroma.
Add ginger, garlic and chilli, previously mixed, and keep frying for 20 seconds.
Add the onion cream, and mix. Cook, stirring occasionally, over medium heat for 20 minutes, half-covered with a lid. After 20 minutes you’ll get a green-brown-ish mixture, completely dry.
Meanwhile, chop the tomatoes and after 20 minutes add them to mixture. Add salt, chili powder and coriander powder.
Cook for 20 minutes with the lid ajar, so that the water evaporates almost completely.
At this point, add the diced tofu and a glass of water. Cook 10 minutes longer (the first 5 with a lid, last 5 without).
Meanwhile, in another pot, boil the basmati rice.
Remove from the heat and add a teaspoon of Garam masala and a handful of fresh basil or coriander. Also, season with salt. Stir well.
Put the rice on a plate and cover it with mixture. Bon appetit!

    wait a minute… I’ve got almost all the ingredients (well… I don’t have tofu but I’ve got half aubergine in the fridge), I could try! I’ll let you know, stay tuned…

    I did it! I replaced tofu with mushrooms and aubergine and I used cumin powder since I hadn’t cumin seeds… it was so delicious! Also, I accompanied it with a bit of unflavoued soy yogurt.
