Bulgur Salad with Cauliflower

A perfect dish to eat cold in hot summer days, but interesting also warm…

is also perfect for a bento-box to bring with you to the beach or the mountains (sooner or later the nice weather will come back!), already divided into individual portions with an ice tile to preserve it.

Ingredients:
bulgur (a handful per person)
1/2 small cauliflower, steamed cooked
sweet and sour onions
sun-dried tomatoes in oil (with basil and garlic)
salt
extra virgin olive oil

Method:
Cook the bulgur for 10 minutes in salted boiling water, drain, season it with extra virgin olive oil, then stir and let it cool.
In a separate, bowl mix all the other ingredients, cut into pieces, then add the bulgur (cold or warm, as you prefer), mix and serve.
For those who love strong flavours, you can also add half raw onion, cut very thinly, and rinsed in cold water … or smoked tofu (slurp!) or lemon juice …
