Pennette with Rocket and Tofu

(serves 2)
140 gr of spelt “penne” pasta
30 gr of rocket
about 200gr of natural tofu
1 clove of garlic
2 tablespoons of wheatbran
extra virgin olive oil, to taste

Lightly brown the garlic in olive oil and add the rocket, washed and chopped with your hands. Meanwhile, boil the pasta in plenty of water. Crumble the tofu with a fork and put it in the pan; let it cook for 2 minutes, with 2 tablespoons of cooking water from the pasta. When done, toss the penne in the sauce, sprinkle with wheatbran… and lunch is served!

For those who feel the need, you can season with salt and pepper.
I simply covered it all with nutritional yeast and … gnammm!

    The idea of adding bran is really good… I understand that it helps the sauce to stick to the pasta, correct? It’s a smart thing that can be done with every pasta dish maybe
