Curry & Ananas Rice

Ingredients:
500 gr of pineapple
3-4 tablespoons of soy yogurt
1 onion
1 clove garlic
salt
curry
pepper
oil

Method:
Finely chop the onion and fry it with the garlic, add curry (I put pretty an abundand dose), salt and pepper and stir over a low heat for 8-10 minutes.
Add yogurt, mix well and add the pineapple, cut into small pieces. Cook 10 minutes longer and serve with rice.
The most suitable types of rice are Thai, and basmati, I had none and used regular organic rice.

    This dish intrigues me quite a lot… I’ll give it a try maybe with some tofu or seitan, I mean, as a main dish
