Potato Mash… My Version
My daughter really likes mashed potatoes, and honestly I like them too. With this version we are both happy!
Ingredients:
(makes 2)
7-8 medium size potatoes
salt-free vegan stock cube
salt to taste
2 knobs of soy butter
2 tablespoons of extra virgin olive oil
hot water as needed
Method:
Peel the potatoes, cut them into chunks, not too small, and wash them. In a pan with high sides, heat the olive oil and add potatoes. Cook over a medium heat for a few minutes, being careful that it doesn’t stick to the pan!
Add the crumbled stock cube, stir and add a little water (shouldn’t cover the potatoes, but remain at a lower level). Close with a lid and cook for twenty to thirty minutes, until the potatoes are almost done. Blend with a
hand blender, add butter, salt, mix well and enjoy it hot! If too thick, add more hot water and blend it: later, remaining there, these pseudo-potato mash it will thicken quite a lot.
