Italian Cold Soup


I feel like having tomatoes!! With this early heat, the palate wants something fresher. I got tempted by the bright red of this wonderful vegetable. … and here it is a soup to be eaten cold, with bread and rocket croutons. And also tonight I experimented.

2 red tomatoes
1 onion
a touch of chilli
a pinch of oregano
fresh thyme, to taste
little extra virgin olive oil
1 teaspoon of cream of balsamic vinegar bio
8 organic green olives

Easy, empty the tomatoes from the seeds and water, otherwise they will release the water later and it’ll “water down” the soup. Liquidize it all with a blender, pour it in a bowl and serve with some good bread, toasted with fresh rocket. Olives are already salty, so there’s no need to add salt. … but depends on your tastes. I assure you that, in its simplicity, is really very good. I forgot, can be a great sauce for pasta!

    I love it! Seems so thick! It’s a good idea to remove water and seeds… I mean, it’s just a simple idea but it changes actually the texture of the whole thing I suppose
