Nectarines and Nuts Cake
The first nectarines are here (so expensive though)! And since I felt like making a cake, I put two and two together and took the chance in this relaxed day at home with my “hairy doll” (my cat :-D)
Ingredients:
300 gr of flour (I used 150 gr of all purpose flour and 150 gr of kamut flour)
250 ml of soy milk (or rice, as you prefer)
the peel and the juice of 1 lemon
55 gr of mixed seeds oil
200 gr of cane sugar
baking powder (see instructions on the package for quantity)
nuts, as many as you like
3 nectarines
Method:
Peel the nectarines and cut them into small pieces, then put them in a bowl with lemon juice.
In a bowl, mix the flour sifted with sugar, add lemon zest and baking powder and mix well.
Add oil, milk and mix well, add nectarines and nuts and pour the mixture into a greased and floured baking pan, and then in the oven at 180°C for 40 min + toothpick test!
This is my “doll”, a kitten so good and beautiful, I’m madly in love with her! She just turned 2 years old 🙂
