Gourmet Artichokes
A light meal, tasty and delicious. Can be prepared either as a complete meal or a main dish.
Ingredients:
8 artichokes
4 potatoes
3 sprigs fresh of mint
1 bunch of parsley
2 white onions
3 tablespoons of olive oil
1 ladle of vegetable stock (carrot, onion, celery)
salt
white pepper
Method:
Prepare the vegetable broth. Wash and cut the artichokes into quarters, and boil them in salted water for 15 minutes. Peel and slice the potatoes thinly. Cut the onions and combine them in a pan with 3 tablespoons of oil; when they start to brown, add the potatoes and then the artichokes, drained. Mix to let the ingredients flavor and moisten the vegetables with a ladle of hot broth; cover with a lid and cook for 15 minutes over medium heat. Remove the lid and cook for 5 minutes longer over a high heat. Add salt and pepper, add mint and chopped parsley, stir and serve hot.
