Eleonora’s KissCake

This is the cake I brought to the office yesterday for my birthday. I spent the last week experimenting, my partner “had” to try a different “ckeese”cake every two day (yep…a true sacrifice, only the brave), because I couldn’t get the texture I wanted. I started baking them, but what I came up with were cakes with a sort of spongy texture, which reminded me of omelette, definitely what I didn’t want. In the end, jusu with this last one, I obtained the consistency I wanted!!! I think that it would have been even better if it was a little thicker and firmer. Anyway, to prepare this goodness you’ll need:
Ingredients:
for the base
300 gr of vegan biscuits
organic mixed seeds oil (even better, soy butter – I don’t have, never tasted and never bought it)
for the filling
700 gr of firm silken tofu
350 gr of sheese
5 tablespoons of nutritional yeast flakes
50 gr of sugar (I didn’t want it too sweet)
1 teaspoon of vanilla essence
2 tablespoon of lemon juice
1/2 cup of soy milk
3 of agar agar powder
for the topping:
peach jam (as much as you want)
150 gr of plain soy yogurt
3 tablespoon of coconut flakes
Method:
Grind the biiscuits with a food processor and mix them with oil or butter (pls no margarine….); get the spring cake tin, press very well the ground biscuits on the bottom and bake for 7/8 minutes at 200°C. Meanwhile, prepare the filling. In a food processor mix all the listed ingredents, except for soy milk and agar agar. Set aside. Now, dissolve agar agar in soy milk, pour the liquid in a small pot and place it on the heat, stirring continuously: as soon as it reaches the boil, boil for a few seconds longer and pour it instantly on the cream. Instantly, again, grab a hand blender and whisk it all, very well. Pour it on the base and forget it in the fridge for a couple of hours. Now, what you’ve got is a neutral base you can fill with whatever you want. I mixed peach jam with soy yogurt, poured the mixture in a sauce pan and heated it on a low heat, once it was hot and well mixed I poured it onto the cake. In the end, I garnished it with peach slices and coconut flakes.
Now, I’m not particularly good with cakes and sweet stuff as I don’t like them that much (I mean, yes, but I prefer other things), but this one here came out delicious!
