Zucchini Sticks
I love zucchini, they have a taste that reminds me of the sea; from this thought came this recipe, simple but tasteful.
Ingredients:
(serves 4)
3 zucchini
100 gr of chickpea flour
1 tablespoon of allpurpose flour
1 pinch of yeast
water as needed
salt
pepper
chopped parsley
oil, for frying
Method:
Prepare the batter with chickpea flour, 1 tablespoon of flour, yeast, parsley, salt and pepper, and finally the water: you should get a nice and thick batter. Let it stand 30 minutes, stirring occasionally. Remove the ends from the zucchini, wash and dry them, cut them in halves lengthwise, and cut each part in halves again, obtaining 8 sticks from each zucchini. Pass them in flour, shake to remove any residue and roll each stick in the batter very well, fry a few pieces at a time in plenty of hot oil.
Excellent both hot and cold, ideal as an an aperitif, accompanied by a tartar sauce and a glass of excellent white wine.
