Aubergine Rissoles
Hello guys, here it is my first recipe! Being on a diet, and having as a main meal “cutlets, vegetable burgers and rissoles” I decided to prepare them by myself, rather than buying them 🙂 They are easy peasy!
Ingredients:
2 medium aubergines
2 cloves of garlic
about 3 leaves of basil
2 teaspoons olive oil
2 slices of bread (crumb only)
3-4 tablespoons of soy milk
salt as needed
breadcrumbs as needed
Method:
First, I cut the aubergines into small cubes and put them in water, until they get soft. I drained all the excess of water and put them in a bowl with garlic and chopped basil, bread soaked in milk, soy, breadcrumbs, a pinch of salt and raw oil. I kneaded very well until I got the right consistency (adding breadcrumbs from time to time); then, I measured them with a ice-cream spoon and place them in a pan with hot oil … I also added a bit of white wine, but of course you can also make them with sauce or any other way!
As a first experiment wasn’t that bad, I’m happy 😀

I’d add a bit of nutritional yeast, to add more flavour…. other than that, they’re perfect
