Mustazzoli from Lecce

These are typical sweets from Puglia, and they’re vegan! This photo does not render at all their chocolaty goodness and their taste of cinnamon and cloves … yum yum yum … I’ll bring a suitcase of them Spain with me …

1 kg of flour
600 gr of toasted and crumbled almonds
300 gr sugar
1 tablespoon of margarine
15 gr of ammonia
10 grams of powdered cinnamon
10 grams of powdered cloves
5 heaping tablespoons of cocoa
cold coffee to knead
grated rind of 1 orange
for the chocolate frosting:
500 gr of sugar
200 gr of water
200 gr of unsweetened cocoa powder

Place all ingredients on the pastry board, mix and knead with coffee. Work the dough so that it gets homogeneous in texture. Form some pellets and then flatten and lengthen them…these are diamond shaped … Place them in baking sheet, buttered and floured or lined with baking paper, and bake at 180┬░C. When ready, pass them in the chocolate frosting and put them back in the oven to dry…
For the icing:
Mix sugar and cocoa and put them in a pot with water, simmer over moderate heat, stirring occasionally until it thickens.
