French Beans Pie


Very simple. but it is a way to enjoy green beans in a different way …

210 gr of green beans (not yet cleaned)
140 gr of potatoes (not yet peeled)
2 tbsp of soy ricotta cheese
1 tbsp of whole wheat flour
wholewheat breadcrumbs

Clean the green beans and peel the potatoes. Steam cook them. Meanwhile, prepare the soy ricotta cheese. I used 400 ml of milk, but I got only two tablespoons… this time I must have done something wrong! Mash the potatoes and ricotta cheese. Blend the beans and add them to the rest. Add the flour, which will thicken it all a bit. Season with salt, pepper and oil. If you want you can also add herbs or spices to taste. Arrange everything in a baking dish, sprinkle with bread crumbs and a drizzle of olive oil and bake the flan in the oven 5-10 minutes, with the grill funcion, if you’re lucky enough to have it!

    Hi there! Sounds delicious, I just have some cooked green beans to finish up! For the ricotta cheese: I think it all depends on the brand of soy milk you use, you know… maybe it has to be a certain percentage of fats to get a proper ricotta ­čÖé
