Pepper Rolls

I’m feeling like having peppers oh so much! Last week I wanted to challenge the bad weather and enjoy a summer dish … to exorcise clouds and tropical rain! Seeing the bright colors of peppers, I almost got moved, what a beauty is the Earth and its colorful fruits 🙂 🙂 Therefore, opening the fridge, I found the right ingredients for these rolls. Really delicious and colourful 🙂 🙂

Ingredients:
1 red pepper
1 yellow pepper
cooked peas
100 gr of vegan ricotta cheese
parsley
basil
chive
extra virgin olive oil

Method:
Preheat oven to 200°C. Wash the peppers, place them on the grill, and cook until tender. Extract and wrap them in an aluminum foil sheet, about 15 minutes, the steam will help remove skin better. Patiently, peel and cut them in strips, not too small. Meanwhile, blend ricotta cheese with herbs. Fill and roll the strips as if they were rolls. Compose the dish, and garnish with flakes of ricotta and peas. Drizzle everything with a little e.v.o. oil. It’s that simple! I’ll tell you, they were really good and light, they’ll be often on my table this summer … summer? Dunno, I cant’ see it yet!
