Seitan with Tofu”tuna” Sauce
Ingredients
(serves 4):
350 gr of grilled or natural seitan
120 gr tofu
1 handful of capers
1 handful of fresh herbs (basil, mint, thyme, chives, parsley, sage …)
1 teaspoon of mustard
soy sauce
juice of 1 / 2 lemon
extra virgin olive oil
a few tablespoons of soy milk
Method:
Cut the tofu into cubes of 2 cm and blanch them in boiling water for 2 minutes, let them cool (this step is optional: sometimes I don’t do it and it comes out well anyway). Place tofu, capers, herbs, mustard, lemon juice, a splash of soy sauce and a few tablespoons of oil in the jug of the blender. Blend at the highest speed adding soy milk to obtain a smooth cream. Slice the seitan into thin slices and arrange them in layers in a tray, alternating seita slices with the tofu base sauce, then store in the fridge for several hours. Before serving, garnish with capers and lemon slices, or tomatoes.
Comments:
This sauce is also excellent on toasts, boiled potatoes, raw vegetables or as a filling for sandwiches with grilled vegetables.
