Cold Seitan
In these days of great heat, what’s better than a cold dish? We should have something to eat, shouldn’t we? Even using the stove just a bit, I like preparing fresh and nutritious meals. The idea for this seitan came from some reminiscences of certain rolls … not really cruelty free! I tried to veganize the recipe and the result was very good. Served cold, with some vegetables, in my opinion this rolls are absolutely suitable to this season and especially quick to prepare ๐ ๐
Ingredients:
(serves 2)
3-4 slices of seitan, for rolls
1 carrot
1 potato
1 small cup of already boiled peas
vegan mayonnaise
salt as needed
1 tablespoon of apple cider vinegar
1 red bell pepper
parsley
Method:
Prepare a Russian salad by steam cooking potato and carrot. I chopped them into cubes to speed things up. Once done, place them in the colander, add a tablespoon of vinegar, which will drain, but will give a stronger flavor to the vegetables. Add a cup of peas, I had them frozen last spring, but if you have them, you can use the organic canned peas. Mix everything and add salt to taste. Take the seitan slices, put them in a hot pan to sear, just a few seconds, as it tends to stick. Set them aside on a plate. Now, once the vegetables are well drained, add the vegan mayonnaise, use the one you like, there are many recipes in this blog. If you want speed things up, you can use the ready made rice mayonnaise. Mix well. Fill the seitan slices one at a time, roll, and cut them into rather large rolls. From a piece you should get about three rolls. Roast a red pepper, peel it, season with olive oil, salt and parsley and garnish the dish. Store in the fridge and pull it out half an hour before serving! I promise you, the result is great … in spite of the heat! Enjoy yor meal chef ๐ ๐
