Veg Paella
Great desire of sunshine, colour and freshness … excellent “zero Km” peppers, a few vegetables to finish up, and here there is my first veg paella!
Ingredients:
200 gr of cooked chickpeas
200 gr of peas
400 gr of cooked brown rice (or wholegrain rice)
1 red bell pepper
1 yellow pepper
1 onion
2 cloves of garlic
1 pinch of saffron
1 pinch of turmeric
1 pinch of salt
4 tablespoons of olive oil
1 tablespoon of lemon juice
Method:
In a large frying pan, fry the minced cloves of garlic and chopped onion in two tablespoons of oil and two of water. While they soften, roast the peppers on the stove plate and then remove their skin. This is quite an unappealing process you can carry out with the technique you prefer, but it’s worth it. Add the peas to the onion while this is still cooking, cover with water, a pinch of salt and let them go for 5-10 minutes. Once the peas are done, add saffron, turmeric, peppers , peeled and cut into strips, chickpeas and rice; sautée for a few minutes to blend the flavours and to let the rice absorb all of the aromas. Add the remaining oil when everything’s done, add salt if you wish, a little lemon juice and serve! Irresistible! Believe me, it is very good just done, but it’s fabulous the next day!

what a nice colour 🙂 I do need a bit of colour these days! also… what about adding some seeds? I’d put them everywhere, you know 😉
I really like it, as there are a lot of vegetables and not that much rice. I mean, it’s a rich paella!
