Chokomuffins
A very successful and delicious experiment!
I decided to veganize and modify a basic recipe that I was given a while ago, and I must say that I did not expect such a good result!
Ingredients:
(makes 12 muffins)
180 gr of margarine (mine was Barbara’s homemade margarine)
350 gr of flour
250 ml of soy milk
baking powder (follow the instructions on the package for quantity)
1 pinch of salt
1 pinch of baking soda
0,5 gr of vanillin
170 gr of cane sugar
vegan chocolate
Method:
In a bowl, vigorously whisk the softened margarine (mine was already creamy, otherwise just leave it a few minutes out of the fridge, you know, with this heat!) and cane sugar, until the mixture is smooth and soft. Add salt and whisk a few minutes longer. Then, add milk and – subsequently – the flour, sifted with baking powder and vanillin. Do not panic if the mixture will be slightly “hard” – or at least less liquid than usual – baking will make the dough very soft! Now add chopped chocolate, or – for those who find them – chocolate chips. Bake for about 20 minutes at 180°C.
