Lemon Squares…

… to wish you happy holidays! Dear Chefs, relax time has arrived for me as well! I’m going on holiday, I just wanted to greet you all with this recipe, really delicious, with lemon, a fruit I particularly love 🙂 I wish you all a serene summer, full of beautiful experiences, and why not, delicious recipes! 🙂

Ingredients:
for the cake
250 gr of Manitoba flour (very strong Canadian flour)
75 gr of white cane sugar
grated rind of 2 lemons
60 gr of soy butter
2 tablespoons of cornstarch
150 gr of rice or almond milk
baking powder
for the topping:
150 gr of lemon juice
2 tablespoons of cornstarch
6 tablespoons of flour
100 gr of home made icing sugar
1 pinch of baking powder

Method:
Prepare the cake, by melting soy butter in a saucepan. Let it cool. Combine all dry ingredients and then, alternating, the liquid, including soy butter, now cool. Work the mixture well with a whisk, letting it incorporate air. It should be nice and fluffy. Prepare the topping with lemon juice, cornstarch, flour, icing sugar and a pinch of baking powder, working it well not to form lumps. If a little liquid remains, do not worry, it’ll dry while baking. Then, bake the cake at 180 Celsius degrees in a 20 × 30 rectangular pan. Bake for about 20-25 minutes. Remove it from the oven and pour the topping over. Bake for 20 minutes, then lower to 160 Celsius degrees and continue baking until it pretty dry. If you have a convection oven, perhaps time will be  shorter, however, regularly use the toothpick test. Once done, let it cool, and cut it into squares. Serve with a good tea … if it’s too hot, serve with a nice drink, made of lemon juice, water and a little sugar 🙂 Enjoy the cake chesf, I miss you … 🙂

    Hi there! For all the UK residents: Manitoba flour is simply what is called “very strong Canadian flour”, generally I find it at Waitrose – they also have the whole grain version. But I’m sure all the supermarkets have it, just look for “very strong flour”
