Coffee-Chocolaty Cookies
This time I struggle a bit while publishing this recipe, as I’ve eaten so many of these cookies that I won’t feel like having them for a while, not even one !
Ingredients:
2 cups of flour (I put a mix of white flour, spelt, and Manitoba – very strong Canadian flour)
baking powder with organic cream of tartar (I used Biovegan’s – follow instructions on package for quantity)
1 teaspoon of coffee
a pinch of salt (1 / 2 teaspoon)
1 / 2 grated dark chocolate bar
1 cup of whole organic cane sugar (panela)
1 / 2 cup of sunflower oil
1 / 4 cup of water
vanilla (1 teaspoon or 2ml of extract)
Method:
In a bowl, combine all the “dry” ingredients, and in another sugar, oil, water and vanilla.
Combine all ingredients and form small disks / pellets.
Lay them on a baking tray lined with baking paper (remember to leave a bit of space between one and the other, as they’ll rise) and bake at 180 Celsius degrees for about 10/15 minutes.
Resist: let them cool down and then dunk them into a nice cup of tea!
