Peach and Basil Sorbet

I tasted this sorbet for the first time many years ago in Grado, and I fell in love with it: the basil gives to the sweetness of the peaches a fresh and spiced note, that makes the taste unique. I tried to reproduce it at home and the result was exceptional, certainly better than the one we bought.

for the sorbet
5 yellow peaches
juice of 1 / 2 lemon
150 ml of sugar syrup
a few leaves of basil
for the sugar syrup
200 gr of sugar
200 ml of water

First, you must prepare the syrup, by dissolving sugar in water and heating it until perfectly clear. With these doses you get more syrup than needed for this recipe, you can keep the remaining in the fridge in a glass jar for other preparations. Let the syrup cool, and in the meantime wash, peel and dice the peaches, and sprinkle them with lemon juice. Purée them with 150 ml of syrup, add the basil, chopped into small pieces with your hands and pour it all in the ice cream maker, activating it according to the instructions. At the end of the program, my sorbet was still a bit soft, so I had to put it in the freezer for half an hour, I do not know though whether this problem was due to my ice-cream maker or to the consinstency of the sorbet, quite liquid 🙂 Anyway, it was delicious and we enjoyed it, comfortably seated on the swing under the walnut trees 😉

    must be so delicious!! maybe you don’t event need an ice cream maker, you know… just a good food processor. just put the peaches in the freezer and then blend it all. OK, I try first and let you know 🙂
